Hi !
My name is Lukasz, I from Poland .. I love italian food pasta , tiramisu and.... pizza!!!!
first of all my english is no good , sorry!
Pizza is my small hobby, my dream in future is to have pizzeria , but i need learn and... I'm here
I know in this moment , i must have flour 5 stagioni green ? So.. Exacly ...whats now ?;)))
I need school , step by step how i can making a good italian pizza. In poland people eating pizza with sauce example chilli or garlic, but i want know how i can make olive garlic because olive is better
Can i have your help ? On this forum all is in italian language ( i dont understand Italian , sorry )

Hi Lukasz, welcome.
Have you ever made pizza dough before?
What kind of pizza do you like? Napoletean Pizza?
I don't know your flour, I think is a "00 Rinforzata W250"
You could do 20-24 hours fermentation at ambient temperature 19-21ºC
1700-1800 gr Flour
1000 gr Water (not cold)
1 gr Brewer's yeast
50 gr Salt
Puntata (First Fermentation): 20H
Appretto(Second fermentation) 4H

Yes, I often making pizza, its not italien but good too
If I finish dough next I must put in fridge , yes? On 20 hours and later take from fridge on 4 hours ?
When i must put salt?
And thats all? Without oil? Sugar? Spices?
What are the best tomatoes for the souce ?

Of course, it's a good Flour.
No fridge!!!
Leave to ferment at room temperature 18-21ºC
No sugar, no olive oil.
The best tomatoes are "Pomodori Pelati"> "Whole Peeled D.O.P. San Marzano Tomatoes"

Ok
So, first i take a bowl and put in water 1L ( no cold, no hot ) , salt and fresh yeast = mixing
Next put flour to water ( all flour? 1700g ) and making dough .
If i have ready dough I waiting 24 hours ( temp. room ) and its everything ?
What is gut for baking pizza in electric oven? ( max 300c )

First of all, salt "dissolved'' in the water, after this the fresh yeast, add 1/3 of the flour and mix well.
Add the rest of the flour slowly. Whole process should take you about 20 minutes.
