long fermentations are much better than "short fermentations"....
the prove, is to try at the same time short fermentation pizza vs long fermentation pizza!
I did that prove several times, and all my friends told me ALWAYS the same reply: long fermentation pizzas are much better than short fermentation pizza...
this is my experience!
concerning Michele, again, I agree with you....
if you make 1000 pizzas a day, you can not reach the top quality level!!!
sure the Michele empliyes knows how to make a real and delicious pizza.... but they are forced to "reduce" the quality, according to the strabiliant number of 1000 pizzas a day...
